Cucumber Yogurt Sauce

2 Lebanese cucumbers
1 cup natural yogurt
2 teaspoons chopped chives
Freshly ground pepper

Method:

1. Dice the unpeeled cucumbers, sprinkle lightly with salt, leave to stand for about 10 minutes then pat dry with paper towels. Combine yogurt, chives and pepper and spoon over cucumber
2. Garnish with salad leaves, and cherry tomatoes.
